Amid pandemics, growing human population, increased demand for protein, climate change, and other pressures on earth’s ecosphere, we need more sustainable, diversified solutions.  Already 70% of agricultural land, 30-50% of land on earth, is used for livestock. The good news is farm raised insects, such as crickets and mealworms, are a promising solution. They utilize less land, water, and other resources than vertebrate livestock and are gaining momentum in the food industry. This presentation will highlight research developing insects for food, pharma and other industries and review innovations in insect-based food ingredients, food product development, farming technology and genetic engineering.
